Black Bean Chili

1 tsp olive oil
1 cup finely chopped onion
3-5 cloves of garlic, minced
1-2 Tbs chili powder
1 -2 Tablespoons of your favorite salsa
1/4 tsp pepper
1/4 tsp salt
2 (15 oz) cans black beans, drained and rinsed
2 (14.5 oz) or 1 (28 oz) can diced tomatoes
1 (4.5 oz) can chopped green chilies, drained (optional)
Cilantro sprigs for garnish (optional)
(I add some vegetable broth so it’s more like a soup)
Heat oil in a large sauce pot over med-high heat. Add onion and garlic; saute 3 minutes or until tender. Add chili powder and next 6 ingredients: bring to a boil. Reduce heat, cover and simmer for 15 minutes, stirring occasionally. Ladle chili into bowls garnish with cilantro, sour cream and/or cheese
