St. Patrick’s Day with the Springfield Colleen Court

SPRINGFIELD, Mass. (WGGB) — Irish soda bread is a favorite treat in Ireland and right here in Western Massachusetts. The Springfield Colleen Court, representatives of their heritage, stopped by the ABC40 kitchen to show us how to make it.

Here is their recipe:

2 cups flour
5 Tbsp sugar divided
1 1/2 tsp baking power
1 tsp salt  3/4 tsp baking soda
3 Tbsp cold butter diced
1 cup buttermilk
2/3 cup raisins or more to taste
Grease 8 or 9 inch round pan, mix dry ingredients together in large bowl then wet ingredients. Use hands to mix. Pour in pan. Bake on 375 for 40 minutes. Sprinkle sugar on top mark with an X.
